Kolhapuri masala is often misunderstood as simply "very hot chilli powder." But ask any native of Kolhapur, and they will tell you it is an art form—a complex symphony of 30+ spices balanced to perfection.
1. The Aroma Test
The first sign of authenticity is the smell. Real Kolhapuri masala shouldn't just hit your nose with chilli heat. You should smell the nuttiness of roasted sesame (til) and poppy seeds (khus khus), followed by the earthy, unmatched fragrance of Dagad Phool (Stone Flower).
2. Color vs. Oil
Authentic masala has a unique property: when fried in oil, it releases a rich, deep red 'tarri' (cut). If your curry looks orange or pale, the chilli quality might be compromised. The legendary Lavangi chilli gives it that signature dark red glow.
