How to Store Spices for Maximum Freshness

Spices are volatile. Their flavor comes from essential oils that evaporate when exposed to air, heat, and light. Here is how to keep your Kolhapuri masala fresh for a year.

1. The Air-Tight Rule

Oxygen is the enemy. Always store your daily-use masala in a small stiff container, and keep the bulk stock in a large, sealed steel, glass, or high-quality plastic jar. Open the bulk jar only when you need to refill.

2. Dark & Cool

Never keep your spice box (Masala Dabba) near the gas stove. The heat kills the flavor. Store it in a cool, dark cupboard away from direct sunlight.

3. No Wet Spoons

Moisture leads to fungus. Always use a dry stainless steel spoon. If you live in a humid area (like Mumbai/Konkan), you can even refrigerate the masala in an airtight container to extend its life.
