The Darker, The Deeper
Authentic Kolhapuri spices, especially those containing roasted onions and dry coconut, will naturally be a darker shade of maroon or brown-red. The roasting process (bhajani) carmelizes the ingredients, darkening the color but intensifying the flavor.
The Stain Test
Take a pinch of masala and rub it on a wet paper towel. Artificial colors often leave a bright pinkish streak, while natural chillies leave a reddish-orange, oily mark.
