Veg Kolhapuri

A hot, colorful mixed vegetable curry that brings dhaba-style bold spice to your kitchen.

Ingredients
- Mixed chopped vegetables3 cups
- Kasturi Kolhapuri Kanda Lasun Masala2 tbsp
- Tomato paste3 tbsp
- Fresh coconut grated3 tbsp
- Oil3 tbsp
Method
Sauté mixed vegetables in 1 tbsp oil until par-cooked, set aside.
In the same pan, fry tomato paste and coconut until thick.
Stir in Kasturi Kanda Lasun Masala and add the par-cooked vegetables.
Add 1 cup water, cover, and simmer for 10 minutes until vegetables are tender.
Chef Tips
• Blanch the vegetables (carrots, beans, peas) with a pinch of sugar to retain their bright colors.
Serving & Storage Instructions
Serve with butter tandoori roti or steam basmati rice.
Can be stored in the fridge for 24 hours.
